Chocolate Walnut Fudge Brownies | Eggless Double Chocolate Fudge Brownie



These lovely Eggless Brownies made with double chocolate and walnuts are the boldest, brightest and the most decadent fudgetastic brownies you will ever indulge in.It combines a fudge's ultra-moist texture and a cakey deliciousness making it great for parties, potlucks and kids' snack box. Instead of walnuts, you may use a combination of your favourite nuts for a serious crunch fest!
























Preparation time : 15mins
Baking time : 30-40mins
Cooling time : 15-30mins
Makes : 15 Brownies (2" by 2")


Ingredients:

Brewed coffee - 1/3cup
Butter - 1 tblsp
Dark chocolate(baking chocolate) pistoles - 2tblsp 
Sugar - 3/4cup
Cocoa powder - 1/2cup
Salt - 1/2tsp
All-purpose flour - 1cup + 2 tblsp
Baking powder - 1/2 tsp (updated)
Extra-light olive oil - 1/3cup
Water - 1/3cup
Vanilla extract - 2tsp
Chocolate chips/ chunks - 1/4cup
Walnuts / Nuts of your choice - 1/2cup

Method:

1.  Pre-heat the oven to 350F / 180C. Grease a 7 by 11-inch baking pan. Chop the walnuts and chocolate chunks into fine pieces.

2.  Using a double-boiler or a microwave, heat the coffee, butter and cooking chocolate, stirring continuously until the chocolate is melted and combined well. Set aside.

     

3.  In a bowl, whisk together flour and baking powder to ensure even mixing and set it aside. 

4.  In another bowl, combine sugar, cocoa powder and salt first. Then, add oil, water and vanilla extract and cream it with an electric mixer for 2-3mins until sugar dissolves. Pour the prepared coffee + melted chocolate mixture and beat for a minute.

   

5.  Add the dry ingredients to this wet mixture and mix with a wire whisk until all the ingredients are just incorporated. Fold in the chocolate chips and nuts.

6.  Pour the batter into the prepared baking pan and bake for 30-40 mins until a toothpick inserted in the centre comes out clean. Cool completely before cutting into squares.


                          

Serve it warm alongside a scoop of ice-cream for an exotic dessert. Sending this to Sangee's lovely Love2Bake event.

Notes :-  

1. If you don't have freshly brewed coffee on hand, just mix 2tsp of instant coffee with 1/3cup of water to replace. It works just fine. DO NOT omit coffee as it disturbs the liquid proportion in the recipe. Also, coffee enhances the chocolate flavour.   

2. This Brownie is in all chocolatey richness by itself. However, if you'd like to pile on extra goodness, go ahead and frost it with Chocolate ganache or any other toppings of your choice.
