Cream Of Cabbage Soup | Low - Calorie Cabbage Soup With Broccoli

Soups are our comfort food which also happen to be a healthy alternative for most weeknight dinners at home. For a quick and healthy dinner,I always resort to one of the easy soup recipes such as this Bean and Mixed Veg Soup which works with pretty much any combination of veggies and/or beans. Another family favourite is this creamy Cabbage soup which I love to include in our everyday menu as often as possible. Cabbage is a Powerfood which is low in calorie and high in fiber and it works wonders in aiding weight-loss and helps with lowering Blood pressure and Cholesterol. In this soup, onion and cabbage are blended with low-fat skimmed milk into a smooth puree and you'd swear it included cream. Even those of you who don't like the strong smell of cabbage would enjoy this. Spare an extra 5-7mins to top it with Broccoli bits which you sure would love to munch on while relishing the soup.

Preparation time - 5mins
Cooking time - 20mins
Serves - 4

Ingredients:-

Butter / Oil - 2tsp 
Cabbage - 1 small head, roughly cut into chunks
Onion - 1, roughly chopped
Ginger - 1" piece (keep as a whole)
Low-fat (skimmed)Milk - 1/2cup 
Salt - As needed
Chilli flakes - As needed
Broccoli - 3/4cup,finely chopped

Method :-

1.  Heat 1tsp butter in a pressure cooker, add chopped cabbage, onion and ginger piece and sauté for 3-4mins until the raw smell comes down. Add salt and enough water to immerse the veggies and pressure cook for 3 whistles.

2.  Once the pressure ceases, open and strain the veggies making sure to collect the cooked water (broth/ stock) in a bowl.

             

3.  Pick the ginger piece and cut into half. You may want to use only 1/2 of it while puréeing. Discard the remaining piece. Purée the veggies along with milk until smooth. You HAVE TO USE only milk for puréeing to get that creamy texture. DO NOT use the stock now.

4. While the veggies are getting cooked, sauté broccoli bits in a tsp of butter for 4-5mins until soft yet crunchy. Set aside. 

              

5.  In a saucepan, add this purée and the stock as needed for your desired consistency and sprinkle the chilli flakes. Simmer it for 3-4mins. Don't let it boil.

                  

Top it with crunchy broccoli bits and serve hot with a slice of bread of your choice. A bowl of Cabbage soup is very filling and extremely nutritious too!

  6. Smell is the reason I avoid cabbage in soups. Sometimes there is no smell and sometimes that smell is so strong that I don't enjoy the soup. This soup is creamy and has a nice texture.
