Sprout Bhel Puri | Moong Sprouts Chaat Recipe

My first taste of a Chaat item was 'Bhel Puri' at a restaurant along Pondi Bazaar in Chennai which specialised in Chaat varieties. Those were the days when I avoided any gravy-kind with strong Masala flavours. But, Chaats with raw veggies and Murmura (Pori) without heavy Masalas, soon became my addiction. Whenever DH and me visited Pondi Bazaar, we loved to dine out at that 'Chaat Corner'. I consider Chaats (without deep-frying involved) as the easiest and healthier snack options for kids too. So, I make sure to stock up on Homemade Sweet Chutney and Green Chutney all the time. Whenever hunger pang strikes,I would whip up a quick chaat with whatever I had on hand and relish. For today's Iron-rich recipe for kids for my Blogging Marathon, I chose this easy and uber-healthy Sprout Bhel Puri. Sprouts are one among the most-nutritious food and also rich in iron. You just need to spend a few minutes to get this done and binge on it.

Preparation time - 15mins
Serves - 4

Ingredients :-
Moong sprouts - 1cup (See notes below)
Potato - 1, boiled, peeled and cubed
Raw mango - 1/4cup, diced 
Onion - 1, finely chopped
Green chilli - 2, finely chopped/ grated
Salt - As needed
Chaat Masala - 1-2tsp
Red chilli powder - 1tsp
Sweet chutney - 2-3tblsp
Green chutney - 2-3tblsp
Murmura / Pori - 2-3cups
Papdi - 4-5, broken into pieces (optional)
Sev / omapodi - As needed
Coriander leaves - A sprig

Method:-

1.  Blanch the moong sprout by adding it to boiling water for 4-5mins until it slightly softens. Remove from heat and strain the water completely.

2.  Combine Moong sprout and potato in a wide bowl. Add mango, onion, chilli, salt, Chaat masala and red chilli powder. Mix well so as to coat well.

      
3.  Now, add sweet chutney and green chutney and mix. Finally, fold in the murmura and papdi. Garnish with Sev and coriander leaves and serve immediately.

     

Easy and delicious Sprout Chaat is ready in minutes.

Notes:-

For preparing Bean sprouts, wash and soak the beans in water overnight. Drain and transfer to a muslin cloth and tie it above the sink so that the water drips inside the sink. Leave it for 24hrs and open the cloth. You will find sprouts measuring about 1cm. This is the perfect stage. Do not leave it more than this time, as it turns bitter as the sprout gets longer. You may transfer it to a Zip-lock bag and freeze it for later use also. It stays good for a month. Whenever you need, make sure to take required quantity and leave it at room temperature for atleast an hour to let it thaw.
