Best Eggless Vanilla Cake | Classic Vanilla Sponge Cake


Today, I would be sharing a very Best Eggless Vanilla Sponge Cake which will be rich, delicious and spongy exactly like the ones which are made with eggs. Trust me, the first time I prepared this cake for my daughter's birthday, my DH and kids did'nt believe its Homemade and its Eggless. It was so soft,light and spongy. Before I found this recipe, I had tried many Eggless recipes from the Net, mostly done with condensed milk. But, somehow I was not 100% happy with the result. Even though they appeared spongy, it was definitely denser in the insides and some cakes made use of excess Baking soda / powder which left an unpleasant after-taste. Simply put, it may be that I have'nt come across the best Eggless cake recipe using condensed milk yet. But, surely, I would like to try that version too and will update once it turns successful. I have done today's cake many a times and every single time, it has come out so well that I had fixed this recipe as my Standard go-to one for Vanilla cake. All my friends and their kids, for whom i have prepared this cake have given excellent feedback. So, I would surely vouch by this recipe and please do try out and share your views. You will not be disappointed at all.

Preparation time – 15mins
Baking time – 25-35mins (Varies slightly with oven and Pan size used)
Yields – Two 9” round cakes (Height abt 2”)

Ingredients:-
All-purpose flour – 2 &1/4 cups plus 1tblsp
Baking powder – 1tblsp
Salt – 1/4tsp
Sugar – 1 & 1/4cup
Butter – 1/2cup
Ener-G Egg Replacer powder – 1 & 1/2tsp
Water – 1/2cup
Milk – 3/4cup
Vanilla Extract – 2tsp

Method:-


1.  Pre-heat the oven to 180C / 350F. Line two 9" cake tins with parchment paper and apply 1tsp of butter on it and the sides of the pan. This helps the cake to come out effortlessly.


2.  Combine flour, baking powder and salt and sieve once to ensure even mixing. Set it aside.

                                 

3.  Meanwhile, in another small cup, mix the Ener-G Egg replacer powder with the given ½ cup water without any lumps.

4.  In a bowl, using electric mixer, cream together butter and sugar for about 5mins, until sugar dissolves and the mixture is light and soft. Scrape down the sides and bottom of the bowl to ensure that the ingredients are incorporated.


5.  Now, add the Egg replacer- water mixture to this and beat for another 1min until combined.

6.  Now, turn the mixer to the lowest speed and add the flour mixture and milk in parts, alternating between the two until both are over. You may just use a hand whisk and gently fold in the flour mixture and milk.



7.  Distribute the batter between the two pans evey and bake at 180C for 25mins until a toothpick inserted in the center comes out clean. Also, you can see the cake springs back to touch. 

8.  Place on a wire rack and allow it to cool. To invert, simply place the cake board over the cake tin and flip it upside down and Voila! Your lovely cake is there. 





You may serve the cake as is or frost it with Whipped cream frosting. My kids are not big fan of Buttercream frosting as it contains too much icing sugar and so I always make Whipped cream frosting only with varied flavours for my kids as well as for friends. Will share my Perfect Stabilised Whipped Cream recipe with stepwise pics and a lot of tips and tricks as a separate post soon. So, here's a pictorial for you to just have a sneak-peek on how frosting is done.

Note:

I always divide the batter and do two 9" cakes. There are two reasons why I do it that way. I love to add a layer of frosting in between the 2 layers and want to avoid the hassle of cutting the cake into two for doing that. Since I have 2 ovens, I always bake 2 simultaneously. This reduces the baking time too and the cake comes out in a nice lovely colour.

But, you could always make one cake with the above measurements. Just make sure the top does'nt brown too much while the bottom is still getting baked. In that case, do the below:

1. Move the cake tin to the lower rack and if you have the option, turn on the lower heating element only.

2. Cover the top with an aluminium foil.

  1. Wow, beautifully decorated cake. Did you use fondant for the birthday cake? Even whipped cream and butter cream frosted cakes are beautiful. Nice to know you found the best eggless cake. Will try it next I make an egg less cake.

    1. Usha, the Castle Cake is with Fondant covering. But the other 2 B'day cakes are just Whipped cream frosting. Do try and share how it turned.
