Ratatouille | Baked Vegetables

'Ratatouille' is a French Vegetable dish wherein spring veggies like Zucchini, Eggplant, coloured Bell peppers are baked on a base of Tomato sauce. It is usually served as a side dish, but may also be served as a meal on its own. Some recipes call for sauteing the veggies and then layering them in a Casserole and bake. But, this recipe is something I just figured out after seeing the pictures of some Ratatouille. It has Zero oil and extremely healthy, so you can gorge on it without guilt. The recipe is so simple with just few ingredients, but it turned out to be a Superhit at home, especially my DH loved it a lot. He was amused at the way a humble dish tasted so terrific. I love the veggies being arranged beautifully in concentric circles and then topped with cheese and baked to perfection. To keep it healthy, I have reduced the amount of Cheese, but you may choose to add more if you so like. Get on and try this easy Ratatouille!!
Preparation time - 10mins
Serves - 4-6


Ingredients:-

(All veggies to be cut into thin roundels)
Zucchini - 1
Red  Capsicum - 1
Green Capsicum - 1
Yellow Capsicum - 1
Eggplant - 2
Homemade Pizza sauce/Paste sauce - 3-4tblsp
Salt - As needed
Pepper powder - 1tsp
Chilli flakes - 1tsp
Cheese - 3tblsp (adjust to your choice)

Method:-

1.  Pre-heat oven to 180C / 350F. Spread the Pasta sauce generously on a baking dish.


2.  Take the veggies in a bowl, mix in salt, perpper powder and chilli flakes to coat thoroughly. Layer the veggies on the baking dish, slightly overlapping each other. Do not pile up too much, as it will not get baked evenly.


3.  Top it with Cheese and bake for 40-50mins until the veggies turn tender. Just use a toothpick to check for doneness.


Scrumptious Ratatouille is ready to be enjoyed. Serve warm. It stays well for a long time. Just before serve, make sure to re-heat and have it warm.

  2. I had something else in mind when I thought about ratatouille. Your version looks colorful and looks like a perfect Spring dish though it is not looking like spring season from any angle where I live. :).
