Vegan Pancake Recipe

Coming next on Tawa recipe series is a healthy, vegan Pancake made with Organic Wholewheat flour, almond milk and flax meal. I reduced the maple syrup and have added some choco chips to make more kids-friendly. Wholewheat flour imparts a lovely nutty flavour while the flax meal makes the Pancake very soft and fluffy. Since this Pancake is high in fiber and protein, it is likely to stick with you until lunch. Come, lets make some Pancakes now!

Ingredients:-

Organic wholewheat flour - 1cup
Flax meal - 1.5tblsp
Baking powder - 1tblsp
Salt - a pinch
Almond milk - 1cup (replace with any other vegan milk of your choice)
Virgin coconut oil - 1tblsp
Vanilla extract - 1tsp
Maple syrup - 1tblsp
Choco chips - a handful

Method:-

1.  In a mixing bowl, whisk together flour, baking powder, flax meal and salt. In another bowl, combine milk, oil, maple syrup and vanilla extract.

2. Pour the wet ingredients to the dry ones and stir gently to combine. DO NOT OVERMIX. This will make the Pancake tough. Let the batter rest for 5-10mins so that the Pancake turns out fluffy.

3. Add in the chocolate chips. Heat a skillet on med-low and scoop about 1/4cup of batter onto it. Let it cook for 2-3mins until small bubbles form on the surface of the pancake.

4. Flip and cook the other side until golden brown.

Serve these healthy, nutritious Pancakes with maple syrup for a fulfilling breakfast.
