Blueberry Boy Bait | Eggless Blueberry Cake | Valentine Day Special


Bluerberry is my family favourite. When in season, I always stock up on them and whip a Blueberry Yoghurt Smoothie or Blueberry Chia seed jam or the sinful Blueberry muffin. Even before I baked these, Blueberry muffin was my first muffin venture and it turned out so yummy. The deep-purplish shade the pops up when being baked is something which makes me even more crazy about it. I cannot stop wondering at how nature has bestowed us with such lovely array of fruits and veggies loaded with nutrients. Maybe because of its anti-oxidant properties, I tend to use more than the usual quantity in my bakes, which you can see below.


Coming to today’s recipe, though it’s named as Boy Bait, trust me, it’s a bait for everyone. History goes back to 1954 when a teenaged-girl from Chicago developed this award-winning recipe at the Pillsbury Bake-off. When asked about the name, she said it was named after the effect it had on boys. They will be hooked on to this after a bite. Though I tweaked the original recipe to make it Eggless and to cut back on the calories, it was utterly luscious and sooooooo yummy that none could stop with one.

Preparation time : 20mins
Baking time : 1hr and 15mins
Cooling time : 15mins
Yields : One 10" round cake or 13" by 9" cake


Ingredients:

All-purpose flour - 2 cups / 280gm + 1 tsp(for coating blueberries)
Baking powder - 1 tblsp
Salt - 1/2 tsp
Butter - 1/2 cup / 115gm
Extra-light olive oil - 1/4 cup+ 2tblsp
Sugar - 1 and a 1/4 cup / 250gm
Ener-G Egg replacer - 4 and a 1/2 tsp + 6 tblsp water (to replace 3 eggs)
Vanilla extract - 1 tsp
Milk - 1/2 cup/ 120ml
Yoghurt - 1/2 cup/ 120ml
Blueberries - 1 and a 1/2 cup

Method:

1. Pre-heat oven to 175C / 350F. Grease the baking pan and keep ready. Wash the blueberries and pat dry with a kitchen towel. Make sure they are dried.

            

2. Sift the flour, baking powder and salt. Set aside.

            

3.  Bring butter to room temperature.In a blender,mix Ener-G powder with the specified amount of water and give it a good whip, say for 30 seconds. It looks creamy and frothy. In a bowl, beat butter, oil and sugar with an electric mixer for 3-4 mins until sugar dissolves.

               

4.  Gradually add this Ener-G mixture and Vanilla extract to the butter-sugar and beat in for a minute. It froths up and looks light and fluffy. DO NOT OVERMIX. Add in milk and youghurt and combine with a hand whisk.

                 

5.  Fold in the flour mixture gently and make sure there are no lumps.

                  

6.  In another bowl, toss blueberries with 1 tsp flour to coat evenly.

                 

7.  Gently fold in the blueberries into the batter. Reserve few to top the mixture.

                  

8.  Spread the mixture into prepared pan and top it the remaining blueberries.  

                  

9.  Bake at 175C / 350F for 1hr. Insert a toothpick to check for doneness.It should come out clean. Mine was done only after 1hr and 15mins. As it an Eggless recipe, I think it takes  more time than that done with eggs.

                    

10.  Let it cool for about 15mins before you turn out and slice it up.
