Ratatouille | Baked Vegetables

'Ratatouille' is a French Vegetable dish wherein spring veggies like Zucchini, Eggplant, coloured Bell peppers are baked on a base of Tomato sauce. It is usually served as a side dish, but may also be served as a meal on its own. Some recipes call for sauteing the veggies and then layering them in a Casserole and bake. But, this recipe is something I just figured out after seeing the pictures of some Ratatouille. It has Zero oil and extremely healthy, so you can gorge on it without guilt. The recipe is so simple with just few ingredients, but it turned out to be a Superhit at home, especially my DH loved it a lot. He was amused at the way a humble dish tasted so terrific. I love the veggies being arranged beautifully in concentric circles and then topped with cheese and baked to perfection. To keep it healthy, I have reduced the amount of Cheese, but you may choose to add more if you so like. Get on and try this easy Ratatouille!!

Eggless Wholewheat Fig Muffin


It was a long weekend and I was planning to do atleast 3-4 bakes for this month. My 9-yr old little girl Ashvitha loves baking and she declared that one of the Bakes should be her choice, that too, a cupcake or a muffin and that she would be doing that. Iam allowed only to guide her without touching anything. Right from measuring out the flour and other ingredients, this healthy Muffin is completely done by my Sweetie Of course, the idea to keep it as healthy as possible is mine. I had ordered Organic Stone Ground Wholewheat flour from Iherb online and it had just arrived the previous day. I was excited about it as there were great feedback about this flour and many of our BM girls were sharing exotic recipes using Wholewheat flour all of which inspired me a lot. Thought of replacing sugar with Jaggery and add Flaxseed meal to serve dual purpose - as an Egg-replacer and to load on the nutritional benefit. The muffin was mildly sweet, soft and fluffy from inside and was very filling.The addition of Dried figs was great in this recipe and the surprise burst of its taste in each bite was amazing. My DH and both girls loved this Muffin and I gave myself a pat for developing a healthy Muffin recipe. Now, I could tweak this a little here and there to accommodate various flavours. Eggless Date Cake

Iam into Day 5 of this month's Mega Blogging Marathon and its a great experience - not only posting my recipes, but blog-hopping and getting to know and learn so many recipes which my friends are posting. All of those are unique and special and most of us are trying and posting Healthy Bakes and many innovative ones. And, I should say, its raining Breads at this Mega BM. Most of my friends are Pros in Bread making and they wow us everyday with their gorgeous Breads. As Iam yet to tame Mr Yeast, Iam just trying to look for a simpler recipe and start my journey on that Genre too. Today's recipe is a very simple, healthy Eggless Dates Cake. I have a  Date Walnut Cake already on this space, but I was just blown by this delicious Cake which my friend Kumudhini ji once baked and brought while she came to visit us. She is such a sweet lady, an awesome Baker, great Dancer and proficient in many artworks too. Being made by such a perfectionist, the Cake was extremely soft and fluffy and had the subtle flavour of Dates and Cinnamon. You should taste this cake to believe what a fantastic combo this is! You can't believe its Eggless. I added Cashew bits and raisins to it and it tasted just like the 'Plum Cakes' we used to get in Indian Bakeries. Eggless Yule Log Cake | Buche De Noel



Yule Log Cake or Buche De Noel is a speciality cake made for Christmas. The recipe emerged in the 19th century, which has a soft and mosit sponge sheet cake which is iced with whipped chocolate cream frosting, rolled into a cylinder and again frosted ont he outside with delicious chocolate ganache. Then, with a fork, rough lines are drawn to resemble the bark of a tree. It is also very nicely presented by cutting one end off and placing that on top or by the side to get the real 'Log' look.

Vegan Banana Walnut Muffin

Day 3 of Blogging Marathon comes with a flavourful Banana Walnut Muffin which is Eggless and Vegan too. I adapted the recipe from here and tried this long time back and it was the Best. Thereafter, I did'nt try any other recipe for Banana Walnut Muffins. I have tweaked it many a times, with reduced quantity of fat (that too, Olive or Canola oil) and reduced sugar too. But, I have got great results even after doing such healthier fix. So, here Iam to share the Best Vegan Banana muffin. If you are not particular about veganising it, you could simply use Butter in place of Vegan Margarine. With Banana deliciousness, these muffins are soft and fluffy and the walnut bits add crunch and a great treat to the palate. Do enjoy these as Breakfast or mid-day snack with a cuppa coffee!

Best Eggless Vanilla Cake | Classic Vanilla Sponge Cake


Today, I would be sharing a very Best Eggless Vanilla Sponge Cake which will be rich, delicious and spongy exactly like the ones which are made with eggs. Trust me, the first time I prepared this cake for my daughter's birthday, my DH and kids did'nt believe its Homemade and its Eggless. It was so soft,light and spongy. Before I found this recipe, I had tried many Eggless recipes from the Net, mostly done with condensed milk. But, somehow I was not 100% happy with the result. Even though they appeared spongy, it was definitely denser in the insides and some cakes made use of excess Baking soda / powder which left an unpleasant after-taste. Simply put, it may be that I have'nt come across the best Eggless cake recipe using condensed milk yet. But, surely, I would like to try that version too and will update once it turns successful. I have done today's cake many a times and every single time, it has come out so well that I had fixed this recipe as my Standard go-to one for Vanilla cake. All my friends and their kids, for whom i have prepared this cake have given excellent feedback. So, I would surely vouch by this recipe and please do try out and share your views. You will not be disappointed at all.

Eggless Carrot Cake | Carrot Cake with Nuts and Raisins


Iam super-excited to announce that I would be participating in Mega Blogging Marathon this whole month. Whats even more special is the theme we have chosen. A theme which is very close to my heart, which has become by passion these days. Yes, its 'Fire up your oven all this April' in which we friends would be coming up with really exciting Oven-based recipes all the days in April with only Sundays being off-days.That sounds very interesting, is'nt it? Though many of my peers are doing a weekly Theme-based Marathon, I choose the free-way, which means my posts will be a mix-up of Eggless Cakes and Muffins, Savory Bakes, Wholesome Lunch or Dinner Recipes and some Breads. I find it really hard to juggle work and kids' studies as well as my passion and hence Iam not able to keep up with the pace and plan ahead. Kudos to my friends who are really awesome at that skill. Our Lead Srivalli, who is a mother of 3, is working full-time and still efficiently multi-tasks and keep up with the spirits and motivates us too. Not even sure if I ever become so organised!

Coming to the first recipe of the Mega BM, its a decadent Carrot cake with crunchy cashew and raisin bits. Though it is a bit on the denser side, the rich and flavourful taste is absolutely stunning. I had bookmarked this recipe from a Vegan Cookbook, borrowed from the local Library here. I have reduced the sugar and tweaked slightly to make it more healthier. Do try and let me know how it turned out!

Eggless Hazelnut Chocolate Cookies


This month is very special as we are celebrating the grand 50th Anniversary of Blogging Marathon. There was a grand plan made for this BM#50 and 12 of my Blogger friends participated in the BM#50 Meet held at Chennai. Not just for a day, but the Meet was for 3 days, full of exciting activities and fun. Though I tried my best to join the Meet, could'nt make it. But, I enjoyed virtually and felt as a part of this lovely Meet through instant updates on Whatsapp as well as all their BM#50 Special posts.

Eggless Date Walnut Cake | Low- Calorie Cake Recipe

This Date and Walnut cake is truly indulgent bursting with the flavours of sweet dates and crunchy walnuts. As an added treat, it has some semi-sweet choco chips too! For those who love those Bakery Style Plum Cake / Christmas Cake in India, this is surely gonna be its best Eggless alternative. Unlike regular airy cakes, this Date Walnut Cake is rich, moist and dense, nevertheless it tasted just too delicious. I chose this recipe for the first day of week 3 of Blogging marathon under the theme 'Iron-rich recipes for kids'. Kids definitley would love Cakes, but instead of regular butter-sugar laden ones, I always seek for healthier recipes so that they can enjoy it guilt-free. This cake is loaded with vitamins and Iron from generous amount of Dates and Walnuts. My kids enjoyed every bite of it and especially my dear brother who was always  skeptical about such healthier treats also got addicted to this cake. I think that was absolute success with this recipe!

Double Chocolate Avocado Cupcake | Eggless Cupcake recipe | Healthy Snack recipe


These cupcakes are special. In my attempts to create a healthier version of cupcake with reduced fat and sugar, I chanced upon this recipe and was impressed with the science behind healthy baking discussed there and waiting to try this delicious Double Chocolate Avocado Cupcake. Surprisingly, my partner of this month's Shhh Cooking Secretly Challenge, Sundari gave Avocado as one of my secret ingredients and I knew that is the best chance to try this lovely recipe. I have talked enough about this Superfood - Avocado here and here.In this recipe, creamy, buttery Avocado replaces most of the butter and the result is soft, moist and chocolatey cupcakes. Those chocolate chunks / chips are responsible for the fudgy insides. Hop on for a healthy treat.

Eggless,No-Gelatin Cheesecake | Vegetarian Cheesecake with Raspberry coulis


Eureka!! Atlast I could figure out the ultimate recipe for the best Eggless, Gelatin-less super-delicious Cheesecake.Though I have had Cheesecake only a couple of times, I would say, it got me seriously addicted, to the core. The taste of each bite is still tickling in my palate...When I was on the lookout for eggless cheesecake recipe, came the shock of my life. Most recipes called for Gelatin which is made from beef. Though I was aware that commercial cakes contain egg,we were quite used to eating Bakery cakes since childhood and hence not very much guilty about it. But, I felt this beef product is definitely unacceptable. So, a strict no-no to my favourite store-bought Cheesecakes,I decided. I tried a vegan Cheesecake recipe from a renowned Vegan blog, but is was a serious disaster. The Cheesecake was all wobbly and could'nt set at all. Finally, I had to bake it without the water bath and it turned into a dark brown cheese blob. Thereafter, I did'nt want to waste ingredients simply, so decided to surf the net as much as possible and read some books on the science of Veg/ Vegan baking. After I gained some knowledge and understanding of the replacers and how they work hand in hand, I went with my gut and developed this recipe. Hence, all that excitement and joy associated with this particular recipe. As you see, Egg replacer, Agar-agar and a small amount of All-purpose flour work together and help in binding and stabilising the cheesecake without affecting its delectable taste. Do try these Cheesecakes, they will sure blow you off!

Homemade Baked Mac and Cheese























Macaroni and cheese, also called 'Mac n Cheese' is a popular dish in America consisting of cooked pasta and cheese and thickened with a white sauce. Absolutely easy to make with basic ingredients, you just need to spare a few minutes to whip this delicious "Mac n Cheese'. The gooey insides and warm crusty top with Italian flavorings reminded me of Pizza in every bite.No wonder it is a soothing comfort food for many. You can tweak this basic recipe according to your preference and make healthier variations and enjoy this as anytime meal. Off to the recipe!

Healthy Bread Cups | Bread Baskets | 30-min Snack recipe

























These Bread Cups are protein-rich snack which can be prepared in less than 30 mins and make for an excellent after-school snack for kids or a healthy appetizer to a meal.Although the same filling can be used to make Burger patties or stuffed into a Sandwich, the little extra effort that goes into making these cute cups makes it very appetizing, especially for kids. The only drawback which I noticed is that it has to served hot, definitely not suitable for a snack box.

Blueberry Boy Bait | Eggless Blueberry Cake | Valentine Day Special


Bluerberry is my family favourite. When in season, I always stock up on them and whip a Blueberry Yoghurt Smoothie or Blueberry Chia seed jam or the sinful Blueberry muffin. Even before I baked these, Blueberry muffin was my first muffin venture and it turned out so yummy. The deep-purplish shade the pops up when being baked is something which makes me even more crazy about it. I cannot stop wondering at how nature has bestowed us with such lovely array of fruits and veggies loaded with nutrients. Maybe because of its anti-oxidant properties, I tend to use more than the usual quantity in my bakes, which you can see below.


Coming to today’s recipe, though it’s named as Boy Bait, trust me, it’s a bait for everyone. History goes back to 1954 when a teenaged-girl from Chicago developed this award-winning recipe at the Pillsbury Bake-off. When asked about the name, she said it was named after the effect it had on boys. They will be hooked on to this after a bite. Though I tweaked the original recipe to make it Eggless and to cut back on the calories, it was utterly luscious and sooooooo yummy that none could stop with one.

Eggless Chocolate Chip Muffin | Bakery-style Choco-chip Muffin | Homemade Muffin



Ever since I started baking a few months back, Muffins have made the most appearances in my kitchen. Whenever I feel like baking something that is quick and easy, I always turn to muffins. And I had always been fascinated by their plump and high tops paired with flavourful centres which makes them an amazing treat for breakfast or grab-n-go mid-day snack. While looking out for eggless muffin recipe, I bumped into quite a lot of recipes together with tips and tricks. A few of my initial attempts were a failure, but this recipe adapted from Raks is a No-fail and I had tried with a lot of variations. Each time, it hits the ultimate taste and make us yearn for more.This recipe is sure to please you with moist, rich, chocolatey and 'sky-high' bakery-style muffins which you would die for!

EGGLESS CHOCOLATE CHIP COOKIES | CHOCO CHIP COOKIES | EASY CHOCOLATE COOKIES

These are the ultimate gourmet cookies - crisp on the outside, soft and chewy on the inside with an amazing taste. Ever since I had a bite of this cookie at Starbucks, its taste and texture got me simply addicted and I was looking out for a perfect Eggless recipe version so that I could enjoy this anytime with my family (did I say my family has a sweet tooth too!)without costing a fortune. When I saw the recipe at Nags' space, I adapted it slightly and tried it. I have made atleast 10 batches now and each time they turned out absolutely incredible and only got me more and more appreciations from my family,friends and especially their kids. Though I had done with Chocolate chips here, I prefer using Chocolate chunks which offers a richer taste with every bite. Agree with you Nags, Chocolate chunks, unlike chips, melt and stay gooey and makes the cookie extraordinary. With the below Easy-to-follow simple steps, even a novice baker can bake these Yummy chocolaty cookies to perfection.
