Vegan Banana Walnut Muffin

Day 3 of Blogging Marathon comes with a flavourful Banana Walnut Muffin which is Eggless and Vegan too. I adapted the recipe from here and tried this long time back and it was the Best. Thereafter, I did'nt try any other recipe for Banana Walnut Muffins. I have tweaked it many a times, with reduced quantity of fat (that too, Olive or Canola oil) and reduced sugar too. But, I have got great results even after doing such healthier fix. So, here Iam to share the Best Vegan Banana muffin. If you are not particular about veganising it, you could simply use Butter in place of Vegan Margarine. With Banana deliciousness, these muffins are soft and fluffy and the walnut bits add crunch and a great treat to the palate. Do enjoy these as Breakfast or mid-day snack with a cuppa coffee!

Preparation time : 20mins
Baking time -20-25mins
Yields - 12 regular muffins / 24 mini-muffins

Ingredients:-
All-purpose flour - 2cups
Baking soda -1tsp
Salt - 1/4tsp
Ener-G Egg Replacer powder - 3tsp
Water - 4tblsp / 1/4cup
Vegan Margarine / Butter - 1/2cup (I use Earth Balance brand)
Sugar - 1/2cup (increase if you have a sweet tooth. Otherwise, this is just perfect)
Mashed Banana - 1cup (abt 2-3 nos)
Vanilla Extract - 1tsp
Non-dairy milk - 3-4tblsp (I used soy milk)
Walnut - 1/4 - 1/2cup, chopped finely


Method:-

1.  Pre-heat the oven to 180C / 350F. Combine flour, baking soda and salt and mix well and set aside. 

2.  In a small bowl, add Ener-G egg replacer powder and 4tblsp water ans whisk well for abt 30secs so that it becomes frothy. Set aside.


3.  Take Margarine/butter and sugar in another bowl and beat using an electric beater, just until combined, say for 30-40secs. You are NOT required to cream it like we do for Cakes.

4.  Add the mashed Banana and and give a mix.


5.  Now, add the Egg-replacer mixture and Vanilla Extract and whisk to incorporate.


6.  Gently, add flour and fold in. DO NOT beat with electric beater. Now, the mixture would be quite thick. Add milk and stir gently to get the right consistency. Stat with 3tblsp milk first and if required, add another tblsp.

7.  Reserve 2-3tblsp chopped Walnuts for topping and fold in the remaining to the batter.


8.  Scoop out (3/4 of a regular ice-cream scoop) and fill 3/4th of the muffin liners.


9.  Top it with Walnut bits and bake for 20-25mins at 180C until a skewer inserted in the middle of the muffin comes out clean. You can see how tall they have. With this recipe, I have never encountered Muffins sink. You can be sure to get those gorgeous Sky-top look in the muffins. They taste so yummy too!!

  7. Muffins look good. I am not a big fan of bananas but am liking its flavor in bakes. I to have onebake with banana and walnuts. Will post it soon.
