Ragda Pattice | Ragda Patties | Aloo Tikki Recipe

Ragda Pattice is a popular Indian Chaat  made with potato patties / pattice dunked in a spicy peas gravy. It forms a part of the famous street food of Mumbai. I chanced upon this recipe from Pavani's blog few months back and simply fell in love with her gorgeous pictures which seemed to be way more tempting. Honestly said, it was those pics that got me hooked on at the first sight and I was curious to read the recipe. Pavani had a perfect recipe and I decided to make it soon and bookmarked it then. It was a pleasant surprise that I was paired with this wonderful blogger friend for this week's theme 'BM Pair' where the pair has to cook three dishes for ths week from each other's blog. This was a great chance to surf through many of her posts to pick some of my favourite ones and I thoroughly enjoyed the time spent at her blog and hope not to miss any of her recipes from now on. One best thing I like about her is the initiative she takes to be health - conscious which reflects in almost every recipe of hers. So, lets move to today's recipe from Pavani's Cookshideout.   

Blogging Marathon #41, Week4 - Day1
Theme - BM Pair (Pavani)

Preparation time - 45mins
Serves - 6

Ingredients :-

For the Ragda:
Dried yellow peas / Vatana - 1cup, soaked overnight
Oil - 1-2tblsp
Onion - 1, finely chopped

Ginger-garlic paste - 1/2tsp
Tomato - 2, diced
Turmeric powder - 1/2tsp
Chilli powder - 1tsp
Garam masala / Kitchen king masala - 1tsp
Chaat masala - 1tsp
Salt - As needed
Tomato ketchup - 1 tblsp
Curd - 1/2cup
Coriander leaves - As needed


For the Pattice: (Makes 12 pattice/patties)
Potato - 3, boiled and peeled
Bread crumbs - 1cup (adjust to consistency)
Coriander powder - 1tsp
Cumin powder - 1/2tsp
Turmeric powder - 1/2tsp
Chilli powder - 1/2tsp
Amchur powder - 1/4tsp
Salt - As needed

To Serve:
Green chutney - 3-4tblsp
Sweet tamarind dates chutney - 3-4tblsp
Onion - 1, finely chopped
Sev - 1/2cup
Coriander leaves - As neded
Curd - 1/4cup

Method:-

1. Pressure the peas for about 5-6 whistles until soft, yet not too  mushy. I cooked the potatoes together with this in a separate bowl above, in the cooker. Set aside.

2. For the Ragda, heat oil in a pan, add onion and saute for a minute until golden brown. Add all the spice powders, turmeric powder and salt to this and sauté for a minute. 

    

3.  Add the tomatoes and ketchup to this and continue to sauté for 2-3mins until it turns mushy.

             

4.  Add the cooked peas and about 3/4cup of water and with a lid on, simmer it for 10mins until it thickens. Stir in the whisked curd and bring to a boil, before turning off the heat.

             

5.  While the Ragda is simmering,  prepare the potato pattice. Combine all the ingredients specified above for Pattice and knead to a soft dough. Make sure the boiled potato is dry.

              

6.  Divide the dough into 12 equal round balls. Roll each ball between the palms and flatten it slightly. To get an even 3/4cm thick edge, roll back and forth gently as shown below. This step will just take an extra 10secs but the result will be amazing-looking patties.

               

7.  Heat a non-stick tawa and place the patties and sprinkle 1-2tblsp of oil around to coat the sides of all of them. Flip and cook on a medium flame until both the sides are golden brown and crisp.It takes about 10mins for this.

               

Arranging the Ragda Pattice:-

While serving, place the Pattice in a bowl, pour the Ragda over, top it with Green chutney, sweet chutney,onion,curd, sev and coriander leaves. 

Enjoy this Ragda Pattice as a healthy breakfast or a filling evening snack. The Ragda is a perfect side-dish for Rotis / Phulkhas too.
