Shrikhand is a very popular Indian dessert which can be whipped up in minutes and is a healthy treat made from curds. When I first saw the recipe, it more or less resembled our 'Lassi', a drink made with buttermilk and sugar. But, the process of using thick curds (hung curds), adding Kesar and nuts and most importantly, whipping it up well made a wonderful transformation and Voila!, an exotic dessert which anyone would die for. In Maharashtra, Puri with Shrikhand is a famous Combo and it does taste out of the world. This recipe is so flexible and you can adapt with your favourite combination of flavour and nuts.

Theme - Indian Desserts
Yields - 2cups of Shrikhand
Ingredients:-
Hung curds / Greek Yoghurt - 1cup
Powdered sugar - 1/2 cup (add or reduce according to taste)
Kesar / Saffron strands -1/4tsp
Milk - 2-3tblsp
Almonds - 2tblsp, roasted and chopped
Method:-
1. Soak the saffron in warm milk and keep aside for 2-3mins until it softens. Gently press with the back of a spoon to extract maximum flavour.
2. Take curds, powdered sugar and saffron mixture in a bowl and start whisking with an electric mixer. Hand whisk may take a little longer time to bring about the soft and smooth consistency.
3. Continue to whisk for 3-4mins until the Shrikhand becomes silky smooth and doubles in volume. You could see how much it has yielded below. Mix in the chopped nuts.
Serve chilled for a refreshing and exotic dessert.
