Hope you are enjoying this Cooking Carnival together with me. As most of you know, I have picked up 26 diet recipes which I categorise under one sub-theme each week. And, for this week, its going to be 6 Diabetic-friendly recipes. When I decided on this theme, I gathered some info from my amma (MIL) who is managing her diabetics very effeciently. She is a very strong woman who strictly follows the prescribed diet and never gives in to cravings. For day 1 of this week, it is a healthy Chaat recipe made with Black chickpea or Kala Channa, which is rich in protein. Hence, it makes up for a filling mid-meal snack or a side-dish.
Cooking time - 20mins
Preparation time - 5mins
Ingredients:-
Black Chickpea / Kala Chana - 1cup
Onion - 1, finely chopped
Cucumber - 1, finely chopped
Raw mango - 1/4cup,finely chopped
Green chilli - 2, finely chopped
Chaat Masala - 2tsp
Jeera powder - 1tsp
Salt - As needed
Coriander leaves - For garnish
Method :-
1. Soak the chickpea overnight for a minimum for 8hrs. Pressure cook for 5-6 whistles until it is cooked to softness. Drain and keep aside.
2. Bring togetether all the above ingredients and the cooked Kala chana and toss well to combine.
Garnish with coriander leaves and serve!
