Low Calorie Tomato Soup | Tomato Moong Dal Soup

Soups are great for a healthy and low-calorie diet, if the addition of cream and high amounts of butter is avoided. This Tomato-Moong dal soup is very nutritious and light and makes a great substitute to regular Tomato soup. The creamy texture of this soup is attained by the addition of moong dal which is also a good source of protein. Instead of big onions, I have used the Small onion / chinna vengayam which indeed added a unique flavour to the soup. This Tomato-Dal Soup recipe is easy to make and can be whipped up in under 30mins.

Preparation time - 5mins
Cooking time - 15mins
Serves - 3

Ingredients:-

Tomato - 3, roughly chopped
Moong dal - 3tblsp
Water - 2cups
Butter - 1tsp
Small onion / chinna vengayam - 1/4cup, finely sliced
Low fat milk - 1/4cup
Pepper powder - 1-2tsp
Salt - As needed

Method:-

1.  Pressure cook the tomatoes and dal with 2cups of water, for just 2 whistles. Else, you could use a pan and cook for 10mins, until dal is just cooked. Let it cool. Puree the Tomato-dal mixture and set aside.

2.  In a pan, add very little butter and saute the onion for 3-4mins until a nice aroma comes.

3.  Now, add in the Tomato puree, milk, salt and pepper powder and bring to a boil.

Piping hot Tomato soup is ready to be devoured!!
