These Bread Cups are protein-rich snack which can be prepared in less than 30 mins and make for an excellent after-school snack for kids or a healthy appetizer to a meal.Although the same filling can be used to make Burger patties or stuffed into a Sandwich, the little extra effort that goes into making these cute cups makes it very appetizing, especially for kids. The only drawback which I noticed is that it has to served hot, definitely not suitable for a snack box.
Preparation time : 15mins
Baking time : 10-15 mins
Yields : 12 Bread cups
Ingredients:
Potato - 3
Green bean / Green whole Moong dal - 1cup (soaked in water for 2 hrs)
Green chutney - 2-3 tblsp (Mint, corriander, ginger, chilli,salt and a squeeze of lemon)
Lemon juice - 1 tblsp
Salt - As needed
Chat masala - 2tsp (Optional)
Corriander leaves - 1/4cup, finely chopped
Olive oil / Butter - 2tblsp
Wholemeal bread slices - 12
Method:
1. Homemade green chutney can be prepared by grinding 1 cup mint leaves together with 1/2 cup corriander leaves, 1/2an inch ginger, 2-3 green chillies and salt to a fine paste.Squeeze in the juice of half a lemon and store it in a refrigerator. It keeps well for a week in the fridge or even more than a month if frozen. Use the green chutney for this recipe.
2. Boil whole potatoes and Green bean in a pressure cooker until 5-6 whistles. Flush cold water over the potatoes and peel the skin. Mash the beans and potatoes with a potato masher.
3. Add the green chutney, lemon juice, salt, chat masala and corriander leaves and mix well. Filling is all set to go into the bread cups.
4. While the potato is cooking, prepare the bread cups and keep it ready.Lightly butter the muffin tray. Remove the crusts of the bread slices and dampen with very little water. Now, gently press each slice into the buttered muffin cups, overlapping slightly and make sure it comes up to the edge of the cup.
5. Pre-heat the oven to 200C / 400F. Fill each bread cup with the prepared filling and bake for 10-15mins, until the bread has crisped well. Serve hot with homemade ketchup.

Notes / Variations:-
1. The filling can be prepared well in advance and refrigerated. Just bring to room temperature before proceeding with the bread cups.
2. You can replace white bread in place of wholemeal bread. Also, with the choice of veggies / beans. Feel free to top it with cheese for an added zest.
3. The same filling can be made into Burger patties. Flatten a ball of mixture, roll it over bread crumbs and shallow fry on a skillet.
4. Always make sure you serve the Bread cups hot.
