Kovakkai Curry | Ivy gourd fry | No-onion,No-garlic Recipe


Here comes another simple everyday recipe made using Kovakkai/Ivy gourd. It is a basic preparation of a stir-fry which applies to several other veggies too. No grinding of masalas and hence can be prepared easily with readily available items in your pantry. I came across this recipe at Pavani's space as a part of 'Ayurvedic Meal Thali', which was mostly similar to our preparation without onion or garlic. Off to the recipe!

Preparation time - 10mins
Cooking time - 15mins
Serves - 4
Ingredients:-
Kovakkai/ Ivygourd - 1/4kg, sliced into thin roundels
Coconut oil - 1-2tsp
Mustard seeds - 1tsp
Urad Dal - 1/2tsp
Jeera/ Cumin seeds -1/2tsp
Turmeric powder - 1/2tsp
Red chilli powder- 1tsp
Coriander powder - 1tsp
Salt - As needed

Method:-

1.  Wash the Kovakkai, trim the edges and cut in thin roundels.

2.  Heat oil in a heavy-bottomed pan, temper it with mustard seeds, urad dal and jeera.Once browned, add the cut veggie together with all powders mentioned above and salt. 

 

3.  Sprinkle about 1/4cup water and continue to sauté on a medium heat for 10-12mins until it becomes soft. DO NOT cook covered as it loses its bright colour.

 
This Kovakkai fry goes well with any Rasam or Sambar mixed with rice.
