Chaat Items are my absolute favorites. For years, I had tasted Bhel Puri only without even giving a try for others and hence it remained my love for years. Since few years, I started trying out other dishes at restaurants and each of the Street foods are unique and delicious. Recently, my best buddy Madhu invited us for lunch and served this as a snack. We don't even know how many Pani puris we ate that day. She had done those puris perfectly and with that stuffing and pani, it tasted out of the world. She sent me the recipe too, but my puris did'nt turn out as good as hers. When checking with her, I realised my mistake of dusting with flour while rolling out the puris and hence it had become hard. She was so sweet to pass me a container of yummy puris recently. So, I knew that would be my choice for our recent family outing to the beach. I just prepared the stuffing and the Pani and used these puris to relish this yummy street food, on a lovely evening at the beach. Thank you Madhu dear!
Ingredients :-
Crisp Puris (Storebought) - 25
Green chutney - 2-3tblsp
Date-Tamarind chutney - 2-3tblsp
Onion - 1, finely chopped
For stuffing:-
Potato - 2, boiled and peeled
Onion - 1/2, finely chopped
Salt - As needed
Turmeric powder - 1/2tsp
Chat Masala - 1tsp
Coriander leaves - few
Moong bean sprouts, boiled - 1/2cup (optional)
For Pani:-
Tamarind extract, thin - 1/2cup (adjust to preference)
Coriander leaves - 1/2cup, packed
Mint leaves - 1cup, packed
Green chilli - 3
Ginger - a small piece
Roasted Jeera (cumin) powder - 1tsp
Salt or Black salt - As needed
Jaljeera powder - 1tsp
Boondi - As needed
Method:-
1. To make Pani, grind coriander, mint, ginger and chilli into a fine paste adding water. Transfer this into a big bowl, add tamarind water, jeera powder, jaljeera powder and salt and stir to combine. Dilute with about 3-4cups of water. Check and adjust water according to your taste. Keep refreigerated for 1-2hrs so that the flavours are incorporated well. While serving, stir in Boondi to this Pani.
2. Mash the potatoes, add salt, chaat masala, turmeric powder, onion and coriander leaves and mix well. I did'nt add Moong Bean Sprouts here, but it definitely adds to the taste and nutrition. Stuffing is ready.
Preparing the Pani Puri:-
Take a puri, break the top part of the crust, fill it with the stuffing, a little each of green chutney and Date-tamarind chutney and finely chopped onion. Dip this in the prepared pani serve immediately.
