It was a long weekend and I was planning to do atleast 3-4 bakes for this month. My 9-yr old little girl Ashvitha loves baking and she declared that one of the Bakes should be her choice, that too, a cupcake or a muffin and that she would be doing that. Iam allowed only to guide her without touching anything. Right from measuring out the flour and other ingredients, this healthy Muffin is completely done by my Sweetie Of course, the idea to keep it as healthy as possible is mine. I had ordered Organic Stone Ground Wholewheat flour from Iherb online and it had just arrived the previous day. I was excited about it as there were great feedback about this flour and many of our BM girls were sharing exotic recipes using Wholewheat flour all of which inspired me a lot. Thought of replacing sugar with Jaggery and add Flaxseed meal to serve dual purpose - as an Egg-replacer and to load on the nutritional benefit. The muffin was mildly sweet, soft and fluffy from inside and was very filling.The addition of Dried figs was great in this recipe and the surprise burst of its taste in each bite was amazing. My DH and both girls loved this Muffin and I gave myself a pat for developing a healthy Muffin recipe. Now, I could tweak this a little here and there to accommodate various flavours. Do check it out and try!! Go on and play around with different dried fruits and nuts and bake it suit your palate.
Ingredients:
Wholewheat flour - 1 & 3/4 cups
Flaxseed meal / powder - 1/4cup
Baking soda - 1 & 1/2 tsp
Cinnamon powder - 1tsp
Milk - 1cup + another 1/4cup
Apple Cider Vinegar -1tblsp
Vanilla extract - 1-2tsp
Jaggery - 1/2cup, powdered
Oil - 3-4tblsp
Dried figs - 1/4 -1/2cup, chopped (Use any other dry fruit or nuts of your choice)

Method:
1. In a bowl, whisk together flour, Flaxseed meal, Baking soda and Cinnamon powder and keep aside. Pre-heat oven to 180C / 350F.
2. In another small cup, mix 1cup milk (set aside the remaining 1/4cup milk) and apple cider vinegar and leave aside. It would curdle up. This mixture is called as Buttermilk in baking, which is one of the best Egg-replacer.
3. Combine powdered jaggery, oil and vanilla extract in a bowl. Add the milk mixture to this and whisk for 3-4mins until Jaggery is almost dissolved.
4. Add in the flour mixture to this. Now, it would be very thick. Add the remaining 1/4cup milk to make a good Muffin mix with perfect consistency.
5. Fold in the chopped figs. Scoop out the batter with Ice-cream scoop and fill the Muffin liners to 3/4th.
6. Bake at 180C / 3350F for about 25-30mins until a toothpick inserted in the middle comes out crumb-free. This time varies from oven to oven. So, do test and then take it out and allow it to cool.
Healthy muffins are ready for you to enjoy a guilt-free, filling snack!
3-4 days ago I baked muffins with wheat flour & flaxseed meal. Those came out good and am sure even your version was delicious.
