Eggless Hazelnut Chocolate Cookies


This month is very special as we are celebrating the grand 50th Anniversary of Blogging Marathon. There was a grand plan made for this BM#50 and 12 of my Blogger friends participated in the BM#50 Meet held at Chennai. Not just for a day, but the Meet was for 3 days, full of exciting activities and fun. Though I tried my best to join the Meet, could'nt make it. But, I enjoyed virtually and felt as a part of this lovely Meet through instant updates on Whatsapp as well as all their BM#50 Special posts.
Coming to this week, I had selected the theme 'Snack foods' from the Wiki list Valli had given. And, for this Day 1 of BM50, Iam sharing a fantastic Cookie recipe which I had shared earlier shared at Priya's space for her Rendezvous with a Foodie event.This Hazelnut Chocolate Cookie Cup recipe is very special to me. This recipe was shared by my Singaporean friend and it was my first venture in baking. These buttery cookies topped with chocolate and crunchy bits of nuts truly taste exotic and it earned me compliments from family and friends whenever I did them. In turn, it inspired me to buy an oven (I did my first batch at my SIL's place) and try out a variety of eggless bakes. The cookies are mildly sweet as they are combined with chocolate and ideal for parties. Lets get started! 

Preparation time : 15mins
Baking time - 30mins

Ingredients:

Butter - 250gm
Sugar - 120gm
All-purpose flour - 500gm/4cups
Milk 2-3tblsp
Whole Hazelnuts - 2-3tblsp
Cashews - 1/4cup
Cooking chocolate - 150gm ( adjust to preference)

Method:

1. Dry roast the nuts separately, each for about 2-3mins until it emits a nice aroma. Finely chop the cashews and set aside. 


2. In a bowl, cream butter and sugar for 3-4mins until smooth.


3. Add flour and knead it into a soft dough. Use the milk to get the right consistency. 


4. Make small balls,flatten it, pop in a whole Hazelnut and roll into a ball.


5. Bake in a pre-heated oven at 180C/350F for 18-23mins until the bottom is browned slightly and a toothpick inserted in the centre comes out clean. 

6. Meanwhile, using a double-boiler, melt cooking chocolate without any lumps. This takes about 4-6mins. Make sure not even a single drop of water gets into the chocolate mixture.


7. Allow the Hazelnut cookies to cool. Place them in cute cupcake liners, and pour chocolate generously. Top them with cashew bits. Once cooled, the chocolate  sets so well on top.


My little girl enjoyed the Chocolatey chore on these cookies and patiently did the job. I assure it will a Superhit at Parties and among your guests. Do try and let me know!
