Kids Corner
The title itself is enough to make anyone stop in their tracks. A recipe which is cheesy, having Mascaspone cheese with Linguine pasta cannot possibly go wrong, am I right? With schools re-opened after December holidays and kids rushing to school in the wee hours of morning, I have been contemplating on healthy Kids' lunch box options to get them through the day. As my girl leaves home as early as 6.30am, I have to pack two meals for her - one for mid-morning and another for lunch. This Linguine pasta was served to us by my sister-in-law Kamal during one of our visits to their place and it got my kids addicted with its fabulous taste. Then on,I have been packing this for their lunch box, tweaking the base recipe with variations in the veggies added to it.
