Thai Pineapple Fried Rice | Thai Vegan Recipes


This week, I would be sharing some of our Favourite One-pot meals Recipes. I love the convenience of One-pot meals, be it on a busy weekday or a lazy weekend. I may not have to spend time for making a side-dish as this itself would be a wholesome meal, which can be had as it is. This Classic Thai Pineapple Fried Rice is truly heavenly and my DH and kids love it like anything. Being in Singapore, they try Chinese and Thai Vegetarian dishes too and this is one of their Fav. Golden grains of rice together with juicy Pineapple bits, crunchy cashews and veggies will make it a real treat to the tastebuds. I just love the way it is presented in Thai Express Restaurant here and so, tried to do it that way. Just carved out the pineapple and used up the Pineapple for preparation and served this Thai Pineapple Fried Rice in the Pineapple itself.

Jeera Pulao | Jeera Rice Rice | Under 30mins Recipe


Jeera Rice or Jeera Pulao is a very easy one-pot dish which is a staple at my place. May it be for kids' lunch box or for a weekend meal with delectable side-dish, this Jeera Rice would fit perfectly. Once the rice is boiled, it just takes a couple of minutes to whit it up. Another good thing is that only minimal ingredients are required which would be readily available at any time. Let's get on to the recipe.

Mixed Veg Dal Paratha - Low-Calorie Paratha Recipe


Today's recipe under Low-Calorie Veg Recipe is going to be an Indian Bread. When talking about breads, almost all Indian breads are Flatbreads which are made in a Tawa on Tandoor without the addition of leavening agents. This Mixed Veg Dal Paratha is a regular on our weekdays' menu. It is packed with lot of veggies together with moong dal and is a Complete meal by itself. You don't have to spend time for making a side-dish. Just a plain curd or pickle would go well with this Paratha. I find it very easy to make for busy weeknights. Pick veggies of your choice and make variations with different legumes for variety in flavours. Do remember not to add too much Dal as it makes the Paratha dough sticky.

Thai Cucumber Salad | Quick Salad Recipes

This week, for Blogging Marathon, my theme is 'Restaurant Accompaniments' which are supposed to be the dishes which are served as complimentary ones at Restaurants while we wait for our ordered dishes to be served. But, most often than not, there is no such Complimentary stuff and whatever we order, we are being charged. However, as a rare occurrence, this Thai Cucumber Salad was served to us at a Vegan Thai Restaurant here in SG. It is a refreshing Salad with cool and crunchy Cucumber and aromatic Coriander leaves tossed in a tangy dressing and served the purpose of a great Appetizer. From then, this Salad became a part of our regular menu. Though the salad was a bit fiery due to Thai Chilli, my kids loved the crunchy peanut bits and the overall flavour of the Salad. When making at home, I minimize chilli and also, as we don't like raw garlic flavour, I usually omit that. This salad can be packed for kids as well as adults for a nourishing mid-day snack. It stays so well. Off to the recipe now.

Corn Chaat | Masala Corn Recipe


Corn Chaat or Masala Corn is such an easy one and you just need mins to mix up the ingredients and there you are with a nutritious, crunchy Chaat which is loved by kids and adults as well. It is a famous street food in India and whenever we go shopping in Chennai, will never miss to have this Chaat along the T-nagar roadside which would be piping hot and it was so heavenly to munch on it and wander about. Corn makes for a filling snack as well. Even a cup of steamed, salted corn tastes fine as is and my kids love it so much. But, it tastes even more great if made into this Chaat which you would relish. As with any Chaats, the Chaat masala, Black salt and Roasted cumin powder are the ones which transforms the simple Corn into a delicious Chaat.

Indian-Style Pasta | Masala Pasta Recipe | Quick Tiffin Recipe


Though Pasta originally belong to traditional Italian cuisine, it has become a staple throughout the world, especially in most parts of India. DH and kids love to have Pastas atleast once a week and I prefer buying Whole-wheat pasta for a healthier choice. Apart from the popular Pasta versions with white sauce and Basil Pesto, this simple Indian-style Pasta with humble Indian spices is a hit at home. Kids love to take this for Lunch box as it retains the taste even if it is not warm. I tend to add a lot of veggies to most Tiffin items and thankfully my kids are not fussy over it. This recipe too is loaded with veggies and Indian spices, sauces, Italian herbs and spring onion, all blend so well and makes up a great pasta. Off to the simplest yet delicious Indian Style Pasta recipe!

Oats Dosa | Instant Oats Dosai | Quick Tiffin Recipe


I was planning for Pasta for my second day of BM, but after trying this super-simple, delicious Oats Dosa, I could'nt contain my excitement and thought to share this first. This awesome recipe was shared by my colleague cum best friend Vasanthi, which was originally her newly wed daughter-in-law, Aishwarya's recipe. Ever since the engagement, my friend had told a lot about this sweet and bubbly girl Aishwarya and it was no surprise that her recipe was damn so yummy. Even my elder girl who fusses over Atta / Rava dosas loved this and asked me to pack the same for her next day mid-day brunch too. Though I have seen innumerable versions of Oats Dosa on the Net, Iam impressed with this soft and spongy instant Oats Dosa which tasted like South-Indian Adai. I would definitely urge you to try this Dosa for a quick and healthy tiffin.

Maharashtrian Kande Pohe | Poha Recipe | Batata Poha


Maharashtrian Kande Pohe / Poha is a very popular breakfast or tea-time snack in Maharashtra. 'Kande' means onion and 'Batata' is potato in Marathi. Made with flattened rice or Poha, this recipe combines onion and potato into a great-tasting breakfast which can be whipped up anytime. Though I used to do Vegetable Aval Upma often at home which is more South-Indian, I learnt this authentic Maharashtrian style Pohe from my friend Apexa last year and this has become a staple at our home now.She also shared that this Poha has various garnishes in different parts of Maharashtra. She hails from Nagpur where Poha is topped with Sev and in Mumbai, grated coconut and finely chopped onion forms a lovely garnish. Other than the chat items, this healthy traditional Maharashtrian Kande Pohe is our family's favourite,which Iam happy to share today.

Puliyodarai | Temple-style Iyengar Puliyodarai Recipe | Rice Variety


During my growing-up years, picnic was like a magical word and since we plan for it very rarely, say, once or twice a year only, we kids used to eagerly await for such short outings. Mom had a picnic set comprising of a set of cups, plates and spoons, all enclosed in a cute, compact carrier. Iam reminiscing how happy I had felt when she used to take it out from the attic a day before we set on a picnic. I used to help wash it and keep it ready for the next day. We fill up 'Milton' Cooler with cold water and what a joy to have a family day-out with cousins! As most of my childhood was spent at Trichy, our favourite picnic spot was the famous 'Mukkombu' which is a dam constructed across the river Cauvery. It still stands as a beautiful picnic spot for people in and around Trichy. Needless to say, our menu for such picnics would be this Puliyodarai and curd rice with 'Vadaams' or papads. This recipe is from my mom's diary in which she had mentioned 'Temple-style recipe' specifically. Though I love my MIL's instant, no-grind Puli Saadam equally, I would share this famous 'Iyengar Puliyodarai' for my second day of Blogging Marathon under the theme Picnic Hampers.

Vegan Spinach Pancake | Eggless Pancake Recipe | Kids Lunch Box Recipe


Today, its another healthy kids' lunch box recipe which is sure going to surprise you. Its a Vegan pancake with a twist - adding spinach to make it more colourful as well as wholesome and nutritious. Nothing can beat the sense of contentment than watching your kid munch on the goodness of a healthy dish without all those fusses. My kids love pancakes and I had tried a few times, but I must admit, I could'nt make perfect pancakes until a while ago. Making a light, fluffy and delicious pancake was a real challenge. In an attempt to nail those pancakes, I browsed around for eggless pancake recipe while I fell in love with this pancake pic on a vegan cookbook and noted down the recipe. I was skeptical though as it did'nt have the mention of any egg-replacers and also made use of very little fats. But, trust me, this is one of the best Vegan pancake recipe which tastes as wonderful as it looks. Kids enjoy sharing these green goodies with their friends too!

Vegetable Rice | Variety Rice recipe | Kids Lunch Box Recipe


When choosing lunch box dishes for kids, it is important to select those which stay tasty even when not hot and are also wholesome. Adding plenty of veggies and cooking a one-pot meal does help with a nutrional boost during the busy hours of our little ones. As the kids study in a multi-racial environment, I tend to avoid packing dishes with strong Masala flavours.This mixed vegetable rice is mildly flavoured and definitely a kids-friendly healthy meal. My kids love the crunchiness of veggies blended with ginger-coriander flavour and mild tanginess from lemon juice.

Bread Paneer Roll | Kids Lunch box Recipe | Under 30mins recipe


Bread Paneer Roll is one of the simplest yet tastiest snack which makes for a healthy lunch box recipe for the kids. With almost no-oil at all, it is one of my favourites as well. And the paneer is a good protein and calcium fix which also keeps them satiated through the day. I bumped into this recipe when browsing around my best buddy Jeyashri's blog and was really impressed at the simplicity of the recipe. My kids as well as DH loved it so much and it became a regular lunch box item. Those following my space, by now know that Iam not for processed and refined food. So, I prepare this roll mostly with Wholemeal or Multi-grain bread only. Trust me, that tastes yummier than its white counterpart. I had some paneer left after I made this Paneer butter Masala a week ago and there came this Kids' Delight - Lunch box series at Srivalli's space. So,my first entry for this week is this yummy Bread Paneer Roll!

Oats Tikki | Quick, Nutritious, Diabetic-friendly, Kids-friendly recipe























This is one of our most favourite go-to recipe for a quick healthy snack / breakfast / dinner. Abundantly packed with protein, fibre and essential vitamins, it makes up for a guilt-free snack you can binge on. These can be put up in less than 30 mins with simple ingredients readily available in your pantry. As a calorie-conscious guy, DH loves to have these Tikkis for breakfast together with a glass of a Fruit-Veggie juice.It is so filling and nourishing to get us through the day.

Oatmeal Raisin Cookies | Healthy Kids Snack | Eggless Oatmeal Cookie



For long, 'Oatmeal raisin cookies' is in my Bucket list. Especially when you know that Oats is a superfood loaded with lots and lots of nutrients and fiber, as a mom, you would definitely want to include it in their daily diet. As Oats is found to have the highest satiety value, giving a feeling of fullness for longer, this cookie has to be a good choice for their mid-day snack. But, this time, I wanted to figure out the healthiest possible version with less sugar, whole wheat flour and little butter. It was'nt too crunchy, more on the chewy side,yet tasted absolutely delicious.

CHEESY LINGUINE PASTA | LEMON MASCARPONE WITH LINGUINE| KIDS LUNCH BOX RECIPE


The title itself is enough to make anyone stop in their tracks. A recipe which is cheesy, having Mascaspone cheese with Linguine pasta cannot possibly go wrong, am I right? With schools re-opened after December holidays and kids rushing to school in the wee hours of morning, I have been contemplating on healthy Kids' lunch box options to get them through the day. As my girl leaves home as early as 6.30am, I have to pack two meals for her - one for mid-morning and another for lunch. This Linguine pasta was served to us by my sister-in-law Kamal during one of our visits to their place and it got my kids addicted with its fabulous taste. Then on,I have been packing this for their lunch box, tweaking the base recipe with variations in the veggies added to it.
